List Summary Email via Workflow Notification

Happy Sunday Everyone! I hope all is well, and appreciate any advice you can give regarding a requirement I have.

We are running Nintex 2010 with SharePoint 2010 currently. Eventually updating to SharePoint 2013. I have no access to the SharePoint servers, but am currently working in a development site I had created.

I had what I thought was a basic requirement, but as many folks have learned can be much harder than it would seem. I have a custom list with SharePoint that will be updated by our team. I am needing to have a workflow send automated weekly and daily summary emails via a send notification email. 

 I am new to Nintex development, and have used collection variables in the past to send a notification on multiple list items. I am needing however, only a single email containing a set of items from the list filtered by basic criteria like date and times.

I believe I can get an automated workflow triggered by a particular day, but not sure on how to get the list items in a single email. I started looking at custom HTML emails vs the rich text editor but I am not a programer so just doing enough trial and error until I get something close to what I need. I read something regarding repeating tables but not sure how this would look.

Any advise you could give would be greatly appreciated.  

 

EDIT: It will also be  good to note that I have looked into the SharePoint Alerting features. This would work but I dont  have access to make custom alert templates etc. and we are not happy with the out of the box solution.
