How to keep versioning on note field

I have versioning turned on for a SP list so users can enter a note in a text field and the note gets date and time stamped.

When a user opens the form to edit, they see all the previous notes stacked up in order.

When I create a Nintex form, this goes away. The older versions of notes do not show and the box can be written over, like versioning control is not on.

 Can this be fixed? How?
